Quick and Easy Weeknight Dinner: Taco Cups

Looking for a quick and easy weeknight dinner?  Try out these taco cups.  I made them for my family recently, and even my picky eater enjoyed them. Yay! Mom Win!

Ingredients:
1 lb of ground beef (or your preferred ground meat)
1 can Rotel (I used mild) *Optional – I provide an alternative at the end of this post
Taco Seasoning
Shredded Cheese (I used the Mexican blend)
6 Medium Sized Soft Tortillas

Steps:
1) Preheat oven to 375 degrees Fahrenheit and cut the soft tortillas into fourths (you should end up with 24, and they should be triangle-shaped).

2) Brown the ground meat on medium high.  I love that I can do this quickly even if I forget to defrost my frozen ground meat. While the meat is cooking, I spray the muffin tins with coconut oil and then carefully place the tortilla quarters into each cup.

3) Add taco seasoning to the browned ground beef.  I make my own mix, which I used 2 tablespoons of and added 1/2 cup of water, and mixed well.  If you are using a seasoning packet, follow the instructions on the packaging.

4) Add 1 can of Rotel, and mix well over medium to low heat, then remove from heat once Rotel mixture is heated also.

6)  Put a scoop of the taco meat mixture into each tortilla cup, then sprinkle cheese on top. (This picture shows the cups I made for my kids without Rotel since they like theirs plain – just meat and cheese).

7) Bake in the oven at 375 degrees Fahrenheit for about 8 minutes.  Watch the taco cups carefully so as not to burn the tortillas.  The cheese should be melted and the tortillas should be crisp.

Looking for my alternative to adding Rotel to the mixture? I put my Homemade Pico de Gallo on top instead. It was so fresh and delicious!!

8) Serve and enjoy immediately!!

*Want a healthier version? Use lettuce cups instead of tortillas, and skip the oven.

    1. I understand! I do the same sometimes too. (I love nachos!) The lettuce wraps are delicious too, and even faster because once the meat is cooked, you put everything together and skip the oven step. Enjoy!
