Cinco de Mayo Recipe Roundup

Cinco de Mayo is here! Who doesn’t love a great reason to have tacos or nachos along with some pico de gallo or guacamole, and of course we can’t forget – Margaritas!

Here are a few of my favorite recipes that would pair well with any celebrations you’re having today.

Homemade Pico De Gallo

I make this probably every other week because it’s so fresh and delicious, and it livens up the dish you add it to. (I like to add it on top of my homemade chicken nachos or taco cups).

Quick and Easy Taco Cups

This one is a family favorite on those nights when I forget to take out something to defrost from the freezer (ground meat, even frozen, cooks up pretty quickly). I especially love it because my kids eat this meal with no complaints. (Mom win!)

Homemade Chicken Nachos

This is another quick and easy meal if you have some chicken already cooked or baked. I love to use chicken from my Crockpot Whole Chicken recipe for these nachos. And, of course, the homemade pico de gallo works well with this one too!

Delicious Chicken Quesadillas

This is another family favorite! I love it because it’s quick and easy (especially if you have chicken leftover from your Crockpot Whole Chicken) and the kids love it! (Can you tell that those are the two things that make a meal a regular on our menu? lol)

I’d pair any of these with a yummy margarita on the rocks with a salt rim. (Or a delicious lime mocktail instead). Happy Cinco de Mayo!! What’s on your menu for today?
