Homemade Turkey Meatballs and Gravy

If you’ve been around here for a while, you know that I get weekly shipments from Imperfect Foods. This past week, I forgot to customize my order, so Imperfect Foods got to choose what to send in my delivery instead. I enjoyed everything they sent, but I did get a few surprises that I wouldn’t normally order. One of them was 1 lb of ground turkey meat. I have no problems eating ground turkey, I just didn’t really have any go-to recipes using it as the main ingredient. Needless to say, it was time to try something new – I chose turkey meatballs and gravy- and that’s why this recipe is a little different from my usual meals.

Side note – my 5 year old asked to help with making the meatballs, and she did a great job! So I would definitely say the meatball portion of this recipe is super kid-friendly and if you have willing helpers, let them help and learn.

Ingredients:

Meatballs:
1 lb ground turkey
2 slices of bread
1/2 onion, finely diced
2 tsp. dried parsley
2 tsp. minced garlic
2 tsp. dried rosemary
salt & pepper
1 Tbsp extra virgin olive oil

Gravy:
1/2 onion, finely diced
3 tsp. minced garlic
1 tsp. dried parsley
1 tsp. dried rosemary
3 Tbsp of flour
2 cups of chicken stock (I used homemade stock from the crockpot whole chicken)
salt & pepper

Steps:
1.) First, we’ll make the meatballs. Cut the bread slices into smaller pieces, then use a food processor to break them into even smaller pieces. I also put the diced onions into the food processor after (so that my kids wouldn’t complain about “those chunky things” in the meatballs lol – mom hack!)

2.) Place the bread crumbs, ground turkey meat, onions, parsley, garlic, rosemary, salt, and pepper into a large mixing bowl and combine well.

3.) Divide the mixture into about 20 meatballs (I separated the mixture in half and then in half again and made about 5 meatballs per section). Roll them between your hands gently to create a smooth meatball. Try to make them as uniform in size as possible.

4.) Coat a large pan with the Tbsp of extra virgin olive oil, and heat. Once heated, add the meatballs to the pan, making sure they do not touch. Cover and cook for 3 minutes, flip the meatballs, and then cover and cook another 3 minutes. Remove the meatballs from the pan.

5.) Now we can make the gravy! Add the second half of the onion and garlic to the same pan. Add a little more extra virgin olive oil and cook for a few minutes.

6.) Add the flour and cook for 3-4 more minutes (stirring well).

7.) Add chicken stock while stirring. Bring to a boil, cover, and cook on low for 5-6 more minutes.

8.) Add rosemary, parsley, salt and pepper. Stir. Add meatballs back to the pan, stir, cover, and cook for 1-2 more minutes. That’s it! Remove from heat, serve over rice (or your favorite grain/starch), and enjoy!
