I had a craving for nachos today and I thought this recipe would fit perfectly as one of the crockpot whole chicken recipes! If you’re a regular reader, you know that I’m all about using what you have, so if you don’t have all the ingredients in my list below, you don’t need to run to the grocery store, you can still enjoy delicious nachos. This list is just the “ideal situation.”
Ingredients:
Cooked chicken, chopped (from your whole chicken)
1 green or red bell pepper, sliced
1 onion, sliced
Shredded cheese (I used a Mexican blend, sharp cheddar works well too)
Tortilla chips
Avocado, sliced
Salsa or Homemade Pico de Gallo
Steps:
1) Preheat oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper, and lay tortilla chips out across the pan.
2) Grill bell pepper and onions on the stove until browned and soft.
3) Add chopped chicken, bell pepper, and onions to the chips. As little or as much as you prefer! (I only have half covered with peppers and onions in this picture because my daughter did not want them on her portion).
4) Cover with cheese of choice. Bake for about 5 minutes or so, until cheese is melted.
5) Add sliced avocados and salsa as desired. Enjoy!
This is another one of my quick suppers for those busy nights (or for when I forget to defrost the ingredients for the planned meal). I also love this for lunch from time to time.
