Chicken Caesar Wraps Using Your Crockpot Whole Chicken

Now that you’ve learned how to cook the whole chicken in the crockpot, saving you time and energy, lets actually use the chicken meat to make a variety of meals.  Today’s recipe is chicken Caesar wraps.  Quick and easy meals are my go-to at the stage of life I’m in with three children under 7.  This recipe could be made healthier, but it’s still better than a frozen pizza or drive-thru supper.

Here’s what you’ll need:

Whole wheat wraps
Cooked chicken meat (could be white or dark)*
Romaine lettuce
Shredded Parmesan Cheese
Caesar dressing
Croutons

*The cooked chicken meat comes from your whole chicken.  If you’ve already served the two breasts for the first night’s supper, then take the meat off of the bones of the legs, wings, back, etc. to have enough for this recipe and possibly others, depending on the size of the chicken you cooked and how much meat you like in your recipes.  If you didn’t use both chicken breasts, then all you need to do is chop one up for this recipe.

1.) Clean the meat off of your crockpot whole chicken and chop up the amount that you plan to use. I used one cup of chopped chicken breast this time.

2.) Clean and chop up your Romaine lettuce (or any healthy green that you’d like to add or substitute).  I use my collapsible salad spinner after cleaning and chopping my lettuce.

3.) Combine chopped lettuce and chicken in a large bowl and add Caesar dressing, Parmesan cheese (I used about 4 oz), and croutons.  Mix well.  I like to chill the salad in the fridge for a while at this point before serving, but it is not required.

4.) Scoop out the chicken Caesar salad mixture into a wrap for each person.  Enjoy!

Even my picky eater loves this supper, especially if he gets a few extra croutons.  This also makes a great cold lunch if you wait to add the dressing once you are ready to eat the wrap (to prevent the salad from getting soggy).
