So if you follow me on Instagram, I hinted that this post was coming up. I’ve been loving my weekly delivery from Imperfect Foods, and most weeks I make sure to include a bunch of kale or two purely to make these kale chips (especially for my picky eater, who actually loves these! #momwin ). *Note: If you use my link, you can get $10 (or more!) off your first order from Imperfect Foods!
Ingredients:
One bunch of kale
2 Tablespoons of extra virgin olive oil
Sea salt
Steps:
1) Preheat oven to 350 degrees Farenheit .
2) Strip kale leaves off of the stem. Break or tear into chip-size pieces.
3) Rinse. Tip: I like to rinse the leaves in my collapsible salad spinner so that I can spin them dry after.
4) Add 1 – 2 Tablespoons of extra virgin olive oil to the kale pieces. Massage oil onto the kale (Time to get your hands messy!). Try to cover them with oil as completely as possible without allowing the pieces to get droopy from too much oil. Sprinkle with sea salt. I put about a teaspoon of salt, but you can put the amount you prefer. Toss the kale to distribute the salt.
5) Place kale pieces on a baking sheet, making sure not to overlap the pieces. I line my baking sheet with a reusable liner or a sheet of parchment paper. Depending on the size of the kale bunch that you have, it may take a few batches to cook all of the kale.
6) Bake for 8 – 10 minutes, flipping the pieces about halfway. I usually start checking to see if they’re done at about the 8 minute mark. If you have smaller pieces, they may need to come out sooner than the larger pieces. The kale chips are done when they’re crispy. (Yum!)
7) Repeat steps 5 and 6 until you’ve baked all the kale pieces. Enjoy!
This snack is best enjoyed immediately, but I have bagged it for a snack for my son before. If you store it in an airtight container and it gets a little less crispy (or even soft), you can always pop them back into a heated oven for a minute or two to crisp them right back up. However, these do not usually last a full day; my kids and I enjoy them so much!
Improving your eating habits isn’t always easy, but by making small changes like getting rid of the bagged chips and having these readily available in the pantry (and at a great price!), you can make it easier to make a healthy choice. It’s one of my little baby steps to improving our eating. Let me know if you try this recipe in the comments below, and as always, share with your friends!
