Easy Homemade Chili Without Beans

Are you looking for something warm and comforting to eat during these cold days of winter? Some of my family’s favorites for cold weather are gumbo, vegetable beef soup, and homemade chili (without beans because none of us like beans).  We serve the chili with corn chips or crackers and sometimes a little cheddar cheese sprinkled on top.  It’s always a hit at the dinner table.  The best part about it? Only a small amount of prep is needed, then just let it cook slowly on the stovetop.  Here’s my recipe for easy homemade chili without beans:

Ingredients:

1 Tbsp Extra Virgin Olive Oil
1 lb ground meat (we use beef)
1 onion, chopped
1 bell pepper, chopped
Garlic, minced
1 can Rotel
1 small can of tomato sauce
Water
1 1/2 Tbsp Chili powder
Salt
Pepper

Steps:

1) Heat 1 Tbsp of extra virgin olive oil in the pot, then add in onion, bell pepper, and garlic (a few cloves, minced) and cook until browned. Stir as needed.

2) Mix in ground meat, salt, and pepper.  Brown the ground meat.

Add in ground beef to the mixture and brown

3) Add 1 can of Rotel, 1 small can of tomato sauce, and then fill the tomato sauce can with water and add the water to the pot also. Stir well.

Add in Rotel and tomato sauce and slow cook

4) Cover and cook on low for at least one hour, stirring occasionally.

5) Add 1 1/2 tablespoons of Chili Powder, mix well, and then cook for another 30 minutes to an hour on low, stirring as needed. Enjoy!
