Lemon Ginger Shrimp Salad

I loved the salads from the salad-a-day week back in January to kickstart some of my healthy habits for this year, so I’m back again with a new one! This lemon ginger shrimp salad brings a little sunshine to your day with the bright flavors of citrus and ginger paired perfectly with grilled shrimp and salad greens. I also mixed in some honey with the dressing to provide a little sweetness with all that tart. The recipe is below, and if you missed my previous salads, I’ll have them at the end of this blog post too.

Lemon Ginger Salad Dressing

Ingredients:
1/4 cup light olive oil
Juice of 2 lemons
2 1/2 tsp fresh grated ginger
2 tsp local honey

Mix all ingredients well in a bowl, and then drizzle over your salad. Can be stored in the fridge for up to a week in a glass jar.

Lemon Ginger Shrimp Salad

First, cook your shrimp. You can do this on the grill, or if you’re like me, you can simply brown them in some butter on a pan on the stovetop. Set aside and let cool.

Next, layer your salad greens. I chose a romaine lettuce bag mix and added some spinach leaves.

Top with the grilled shrimp, some carrot slices, a wedge or two of lemon and then drizzle your homemade lemon ginger salad dressing on top. Enjoy!
