Raspberry Vinaigrette Dressing From Scratch
Ingredients
6 oz Raspberries
1/2 cup Red Wine Vinegar
1/4 cup Extra Virgin Olive Oil
1/4 cup of Water
1 tsp Pink Himalayan Salt
1/4 tsp Black Pepper
Directions
- Mash the washed raspberries with a fork in a bowl. If you prefer a smooth dressing instead, you can use a blender, but I like the little pieces of raspberry in the dressing.
- Add the rest of the ingredients to the raspberries and mix well.
- Store in a glass jar (I like to use a mason jar) in the refrigerator for up to a week. Enjoy!
Raspberry Spinach Salad
My favorite homemade salad combination to put Raspberry Vinaigrette Dressing on is this Raspberry Spinach salad with all of my favorite toppings. First, place a layer of romaine lettuce in the bottom of your dish. Then top with spinach. I added a bit of kale this time because I had some fresh from my Mom’s garden.
Next, add avocado slices for some healthy fats and then grilled chicken (shredded) for protein. This is a great way to use leftover chicken, like from my crockpot whole chicken recipe
Finally, add blue cheese crumbles and sliced almonds. Finish with the Raspberry Vinaigrette and few fresh raspberries on top. Delicious!
Ham Sandwich Salad
Looking for a homemade salad combination that’s not so involved? Try making a “ham sandwich” salad. Most of us have these ingredients already in our fridge. I like to make this salad for myself when I serve my kids sandwiches for lunch.
- Fill your bowl with salad greens of your choice. (I prefer romaine, but there are lots of other choices that would work). Slice a bit of ham into small pieces and sprinkle it over the salad greens.
- Next, add cheese of your choice. I like shredded mozzarella for this particular recipe. You could easily use shredded cheddar, feta, or blue cheese crumbles too. I also added a few sunflower seeds on top.
- Lastly, top with a small amount of your favorite salad dressing. I like a very light amount of ranch or plain old extra virgin olive oil on this salad.
Simple and Easy – Bag Salad Mix
On those days when you just need something easy for lunch and you’re tempted to visit the drive through of the nearest fast food restaurant, choose a bag salad mix instead. It’s still a fairly “instant” meal, but it’s a much better choice. My favorite salad mixes already have the yummy toppings included. The only warning I have here is to either skip or drastically limit how much you use of the included dressing. These are usually not very healthy. I love the array of choices I find at my local grocery stores and even Walmart! Some of my favorites are the asian and the bacon-ranch.
