Ingredients
2 – 3 small ripe avocados
1 Roma tomato
1/2 onion
Fresh cilantro
Avocado oil (or olive oil)
Salt and Pepper
Lime juice or Lime Vitality Oil (optional)
Food chopper or processor (I love my mini Hamilton Beach food chopper, similar to this one)
Steps
- Peel the avocados and remove the pits. Cut into cubes and add to the food chopper.
- Dice the tomato and half of an onion. Add to the food chopper.
- Add chopped cilantro, to taste.
- Top with a splash of avocado oil, salt, and pepper. Close the lid and blend all the ingredients in the food chopper or processor. Add more oil if the consistency is too thick. Plan to save some in the fridge, but don’t want it to turn brown? Add a little lime juice or two drops of Lime Vitality Oil and mix well.
Enjoy! I love to add this guacamole to tacos, fajitas, and nachos. I also enjoy it as a dip with tortilla chips (the perfect appetizer for Taco Tuesday!).
