Easy Homemade Salad Recipes

It’s the end of week two! Have you stuck to the habit of eating a salad a day? I don’t know about you, but I enjoyed this even more than I thought I would! I think it’s because I kept things interesting by changing up the salad each day. If you’re looking for more easy, homemade salad recipes, I have two more for you today!

Classic Cobb Salad

When I want a delicious salad at a restaurant I haven’t been to before, I usually can’t go wrong with a Cobb Salad. However, against popular opinion, I order mine without tomatoes, so here’s my take on the Classic Cobb Salad. I started with Romaine lettuce, then added chicken breast (from my crockpot whole chicken) and sliced boiled eggs.

Then I topped it with crumbled bacon pieces (I used the leftovers from breakfast) and blue cheese. Delicious! Avocado slices would have been another great addition to this salad combo, but I was out of avocados. (Next time!) Top with your favorite salad dressing.

What I love about salads with all the toppings, like this one, is that I know I’m getting a great serving of veggies, but I’m also not left hungry. These are so filling!

Homemade Ranch Dressing

My favorite dressing for a cobb salad is ranch dressing. However, as you know, I prefer to make my own dressings when possible, in order to avoid unhealthy ingredients. This is the recipe I use for ranch dressing:

Ingredients:
3 Tbsp Dried Parsley
1 Tbsp Dried Dill Weed
1 Tbsp Onion Powder
1 Tbsp Garlic Powder
2 tsp Salt
1 tsp Black Pepper

Directions:
Add 1 Tbsp of this dry ranch mix to 2/3 cup of plain yogurt. Mix well. Store dressing in a glass jar for up to 1 week in the fridge. Store the dry mix in a glass container along with your other dried herbs. It can be used for cooking as well as salad dressing.

Orange Pecan Salad

When I see this salad, it screams FALL to me, but it tastes just as wonderful now in the middle of winter (and my oranges are ripe now too). I love to combine this meatless salad with a homemade, tangy orange dressing (recipe below).

As always, I first start with a layer of romaine lettuce followed by a layer of spinach.

Then I add apple pieces (I used Honeycrisp this time, but most apple varieties will work well in this recipe). Next were pecans (I love the ones from Cane River Pecan Company – their products make delicious gifts, by the way), followed by cut up orange slices, and blue cheese crumbles. Lastly, I add red grapes cut into fours.

Tangy Orange Salad Dressing

Ingredients
1/3 cup rice vinegar
1/4 cup orange juice
1 Tbsp Extra Virgin Olive Oil
1/2 Tbsp Dijon Mustard
1 tsp Minced Garlic
1 Tbsp Honey

Directions:
Whisk all ingredients together well. Store in a glass jar in the fridge for up to a week.

I highly recommend topping the Orange Pecan Salad with the Tangy Orange Dressing. I love the mixture of all the sweet and tangy flavors!

    1. That’s a great goal! Once you have a few of the main ingredients, it’s easy to mix and match to keep things interesting. I can’t wait to hear which one you liked the best.

  1. That is a nice tip for the yogurt dressing. I usually just do some variation of vinaigrette but for something creamy and still healthy that’s a great option!

    1. Yes, plain yogurt is so adaptable for dressings! (and such a great healthy option) I’ve even used it as a mayonnaise replacement in a chicken salad recipe too.
